Ingredients

  • 1.5 cups steel cut oats (do not substitute with quick cooking, instant, or rolled oats)
  • 4 cups water
  • 2 cups milk (any kind you like; I used skim)
  • 2 large ripe bananas (mashed; plus additional banana slices for serving)
  • 3 tablespoons ground flaxseed meal
  • 2 teaspoons pure vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoons freshly grated nutmeg (grate your own for an amazing flavor upgrade)
  • 0.25 teaspoons kosher salt

Instructions

  • Begin by gathering all your ingredients. Measure out the steel cut oats, water, milk, mashed bananas, flaxseed meal, vanilla extract, cinnamon, nutmeg, and salt.
  • In your slow cooker, add 1.5 cups of steel cut oats, 4 cups of water, 2 cups of milk, 2 mashed bananas, 3 tablespoons of ground flaxseed meal, 2 teaspoons of vanilla extract, 1.5 teaspoons of ground cinnamon, 1/4 teaspoon of freshly grated nutmeg, and 1/4 teaspoon of kosher salt. Stir the mixture well to combine all the ingredients.
  • Cover the slow cooker and set it to low heat. Allow the oats to cook overnight, approximately 7 to 8 hours.
  • In the morning, stir the oats to combine and serve hot. Top your bowl with additional banana slices and your favorite mix-ins like chopped walnuts, raisins, chocolate chips, maple syrup, or peanut butter.

Notes
