Ingredients

  • 3 cloves garlic minced
  • 1 each lemon juice and zest
  • 1 each orange juice only
  • ½ cup olive oil
  • 2 teaspoons sweet paprika
  • ½ teaspoon black pepper
  • 1 teaspoon red pepper flakes more if you like it spicy
  • 1 teaspoon dried oregano
  • 2.2 lb chicken pieces skin on
  • 1 teaspoon salt
  • 1 tablespoon fresh parsley chopped to serve

Instructions

  • In a mixing bowl, combine the minced garlic, lemon juice and zest, orange juice, olive oil, sweet paprika, black pepper, red pepper flakes, dried oregano, and salt. Whisk together until well combined.
  • Place the chicken pieces in a large baking dish. Pour the marinade over the chicken, ensuring each piece is coated well. Cover with plastic wrap and let marinate in the fridge for at least 1 hour, ideally overnight.
  • Preheat your oven to 400°F (200°C).
  • Bake the chicken in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
  • Remove the chicken from the oven, let it rest for a few minutes, and garnish with chopped fresh parsley before serving.
