Ingredients

Pasta

  • 16 ounces penne pasta

Garlic

  • 3 cloves garlic, minced

Onion

  • 1 tablespoon onion powder or 1/2 onion, diced

Herbs

  • 1 tablespoon dried parsley
  • 0.25 teaspoon dried thyme

Artichokes

  • 14 ounces quartered artichoke hearts, drained

Water

  • 4.5 cups water

Cream

  • 0.5 cup heavy cream

Spinach

  • 2 cups fresh spinach

Seasoning

  • Salt and pepper to taste

Cheese

  • 0.5 cup shredded parmesan cheese

Instructions

  • Step 1: Gather and prepare all your ingredients. Dice the onion if using, mince the garlic, and drain the artichoke hearts.
  • Step 2: In a large pot over medium heat, combine the water, penne pasta, minced garlic, onion (if using), onion powder, dried parsley, and dried thyme. Bring to a boil, then reduce to a simmer and cook for 10-12 minutes until al dente.
  • Step 3: Stir in the drained artichoke hearts and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.
  • Step 4: Reduce heat to low, pour in the heavy cream, and stir to combine. Simmer for a few more minutes.
  • Step 5: Add the shredded parmesan cheese and stir until melted. Season with salt and pepper to taste.
  • Step 6: Serve hot, garnished with extra parmesan cheese and fresh herbs if desired.
