  • Step 1: Preheat the Oven - Preheat your oven to 350°F (175°C) and prepare your muffin pan by greasing it lightly or lining it with paper liners.
  • Step 2: Mix the Dry Ingredients - In a large mixing bowl, combine the rolled oats, baking soda, ground cinnamon, and sea salt. Stir until well blended.
  • Step 3: Combine the Wet Ingredients - In a separate medium mixing bowl, whisk together the eggs, applesauce (or cottage cheese), avocado oil (or melted coconut oil), and pure maple syrup until smooth and creamy.
  • Step 4: Combine Wet and Dry Mixtures - Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or spoon until just combined. Be careful not to overmix!
  • Step 5: Add Raisins - Fold in the raisins, ensuring they are evenly distributed throughout the batter.
  • Step 6: Fill the Muffin Pan - Spoon the batter into each muffin cup, filling them about 3/4 full to allow room for rising.
  • Step 7: Bake - Place the muffin pan in the preheated oven and bake for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
