Ingredients

  • 3 large eggs
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 2 tablespoons melted butter
  • 1 cup milk
  • additional butter for frying the pancakes
  • jam for serving

Instructions

  • In a mixing bowl, crack the three large eggs and whisk until well-beaten. Add in the cup of all-purpose flour, salt, and melted butter. Gradually pour in the milk while whisking continuously until you achieve a smooth batter. Let the mixture sit for about 10 minutes.
  • Place your non-stick skillet or crepe pan over medium heat and add a small amount of butter. Allow the butter to melt and coat the pan evenly.
  • Pour about 1/4 cup of the batter into the center of the skillet. Quickly tilt and swirl the pan to spread the batter evenly into a thin layer. Cook for about 1-2 minutes until the edges begin to lift and the underside is golden brown. Carefully flip the pancake and cook the other side for another minute.
  • Transfer the pancake to a plate and repeat the process with the remaining batter, adding more butter to the pan as needed.
  • Stack your Norwegian pancakes on a warm plate and serve with your favorite jam, fresh fruit, or a sprinkle of powdered sugar.
