Ingredients

  • 1 cup unsalted butter diced
  • 2 cups granulated sugar
  • ½ cup nonfat milk
  • ½ cup unsweetened cocoa powder
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 cups quick cooking oats

Instructions

  • In a medium saucepan, combine the diced unsalted butter, granulated sugar, nonfat milk, and unsweetened cocoa powder. Place the saucepan over medium heat and stir until the butter melts and the mixture is smooth.
  • Increase the heat slightly and bring it to a rolling boil. Allow it to boil for exactly 1 minute without stirring.
  • Remove the saucepan from heat. Stir in the creamy peanut butter, vanilla extract, and salt until well combined.
  • Add the quick cooking oats to the saucepan and stir until evenly coated.
  • Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Let cool for about 30 minutes, or refrigerate for quicker cooling.
