  • 1 pound russet potatoes Peeled and diced
  • 2 teaspoons salt Divided, plus more as needed
  • 1 cup milk, half and half, or heavy cream Choose based on desired creaminess
  • 4 tablespoons butter Cut into chunks

  • Step 1: Prepare the Potatoes - Peel and dice the russet potatoes into even chunks, roughly 1-inch in size.
  • Step 2: Season and Microwave - Place the diced potatoes in a microwave-safe bowl, sprinkle with 1 teaspoon of salt, and cover with water. Microwave on high for 10-12 minutes, until fork-tender.
  • Step 3: Drain and Mash - Remove the bowl from the microwave, drain excess water, add butter and remaining salt, and mash until smooth and creamy.
  • Step 4: Add Creaminess - Pour in your choice of milk and mix until desired consistency is reached. Adjust seasoning as needed.
