Ingredients

  • 1 large head Romaine Lettuce rinsed, chopped, and dried
  • 1 cup Cherry or Grape Tomatoes halved
  • 1 avocado diced
  • 1/2 small yellow onion thinly sliced
  • 1 cup Snap peas (optional, whole)
  • 1/2 cup corn kernels canned or freshly cooked
  • 1/3 bunch fresh cilantro chopped
  • 1/3 cup extra virgin olive oil
  • 2 medium limes juiced
  • 1/4 - 1/2 tsp Tabasco sauce or to taste
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper freshly ground

Instructions

  • Begin by rinsing and drying the large head of romaine lettuce. Chop it into bite-sized pieces and place it in a large salad bowl. Next, halve the cherry or grape tomatoes, slice the cucumber, and thinly slice the yellow onion. If you're using snap peas, rinse them and leave them whole.
  • Once your vegetables are prepped, add the diced avocado and corn kernels to the salad bowl. Toss in the chopped cilantro as well, reserving a bit for garnishing later if desired.
  • In a separate bowl, combine the extra virgin olive oil, lime juice, Tabasco sauce, sea salt, and black pepper. Whisk together until the mixture is well combined and emulsified.
  • Pour the lime dressing over the salad ingredients in the large bowl. Gently toss everything together, ensuring that the dressing evenly coats the vegetables without breaking the avocado too much.
  • Taste the salad and adjust the seasoning if needed, adding more salt, pepper, or Tabasco sauce to your liking. Serve immediately, garnished with additional cilantro if desired.
