Begin by rinsing and drying the large head of romaine lettuce. Chop it into bite-sized pieces and place it in a large salad bowl. Next, halve the cherry or grape tomatoes, slice the cucumber, and thinly slice the yellow onion. If you're using snap peas, rinse them and leave them whole.
Once your vegetables are prepped, add the diced avocado and corn kernels to the salad bowl. Toss in the chopped cilantro as well, reserving a bit for garnishing later if desired.
In a separate bowl, combine the extra virgin olive oil, lime juice, Tabasco sauce, sea salt, and black pepper. Whisk together until the mixture is well combined and emulsified.
Pour the lime dressing over the salad ingredients in the large bowl. Gently toss everything together, ensuring that the dressing evenly coats the vegetables without breaking the avocado too much.
Taste the salad and adjust the seasoning if needed, adding more salt, pepper, or Tabasco sauce to your liking. Serve immediately, garnished with additional cilantro if desired.
