Ingredients

  • 8 pieces Corn + Flour Blend Tortillas (Taco size, or just flour or corn)
  • 1/4 cup Avocado oil (or canola or vegetable oil, for frying)
  • 1/2 cup Homemade enchilada sauce (or store-bought can of mild red enchilada sauce)
  • 1 tbsp Diced green chilies (drained)
  • 1/4 cup Diced canned tomatoes (drained)
  • 1 lb Ground beef
  • 3 1/2 tbsp Homemade taco seasoning (or 1 store-bought packet)
  • 2/3 cup Tomato juice (from can)
  • 16 oz Canned refried beans
  • 3 tbsp Milk or water
  • 1 cup Mexican blend cheese (shredded)
  • 1/4 cup Fresh tomatoes (petite diced)
  • Diced green onions (optional)
  • Sliced black olives (optional)
  • Sour cream (optional)
  • Taco sauce (optional)
  • Salsa (optional)

Instructions

  • Start by heating the avocado oil in a large skillet over medium heat. Carefully fry each tortilla for about 30 seconds on each side until they are golden brown and crispy. Remove them from the skillet and drain on paper towels.
  • In the same skillet, add the ground beef and cook over medium heat until browned. Drain any excess fat. Stir in the taco seasoning and mix well. Add the tomato juice and let it simmer for about 5 minutes until slightly thickened.
  • Preheat your oven to 400°F (200°C). On a baking sheet, start with one crispy tortilla as your base. Spread a layer of refried beans on top, followed by a generous portion of the seasoned ground beef. Next, drizzle some enchilada sauce over the beef, then sprinkle with diced green chilies and diced tomatoes.
  • Top your pizza with a generous amount of shredded Mexican blend cheese. If you love cheese, don’t be shy—add more for that gooey goodness!
  • Place the assembled pizza in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly. Keep an eye on it to avoid burning!
  • Once out of the oven, let it cool for a minute. Then, top with fresh diced tomatoes, green onions, black olives, and any other condiments you desire such as sour cream, taco sauce, or salsa.
  • Slice your Mexican Pizza into wedges and serve warm. Enjoy the delightful crunch and the explosion of flavors!
