  • 2 whole ripe avocados halved
  • 1 cup shredded chicken cooked
  • 4 whole hard boiled eggs chopped
  • 1/4 cup oil-packed sun-dried tomatoes chopped
  • 1/2 cup fresh herbs roughly chopped (basil + dill)
  • 1/2 cup crumbled feta cheese
  • 1 whole lemon juice
  • Kosher salt to taste

  • 6-8 pieces toasted whole grain bread
  • Fresh arugula or microgreens

  • Begin by gathering all your ingredients. Halve the avocados, remove the pits, and scoop the flesh into a mixing bowl. Chop the hard-boiled eggs, sun-dried tomatoes, and fresh herbs, and add them to the bowl.
  • Next, add the shredded chicken and crumbled feta cheese to the mixing bowl. The chicken should be cooked and cooled. If you have leftover chicken, this is a great way to use it up.
  • Squeeze the juice from one lemon over the mixture. This will not only add flavor but also help prevent the avocados from browning. Season with kosher salt and pepper to taste.
  • Gently fold all the ingredients together. Be careful not to mash the avocados too much; you want to maintain some chunks for texture.
