Baking Instructions

  • Step 1: Preheat the Oven. Preheat your oven to 325°F (160°C).
  • Step 2: Prepare the Baking Sheet. Line a baking sheet with parchment paper.
  • Step 3: Mix Dry Ingredients. In a medium bowl, sift together the almond flour, granulated sugar, matcha powder, and a pinch of salt.
  • Step 4: Whip Egg Whites. In a separate large bowl, whisk the egg whites until frothy.
  • Step 5: Add Flavorings. Add the lemon juice and almond extract to the whipped egg whites.
  • Step 6: Combine Ingredients. Gradually fold the dry mixture into the egg white mixture.
  • Step 7: Scoop the Cookies. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Step 8: Dust with Confectioners’ Sugar. Dust the tops of the cookie dough balls with confectioners’ sugar.
