  • 2 pounds boneless, skinless chicken breasts cut into 20 long strips
  • 2 ripe mangoes diced into chunks
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce use a -certified variety
  • 2 tablespoons honey or agave syrup
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 Juice of lime
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Wooden or metal skewers if using wooden skewers, soak in water for at least 30 minutes before grilling

Instructions

  • Step 1: In a medium mixing bowl, whisk together the olive oil, soy sauce, honey, minced garlic, grated ginger, lime juice, ground cumin, salt, and pepper.
  • Step 2: Add the strips of chicken to the marinade and toss until they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
  • Step 3: Prepare the skewers by threading the marinated chicken strips and mango chunks alternately onto the skewers.
  • Step 4: Preheat your grill to medium-high heat.
  • Step 5: Place the skewers on the hot grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and the mango is caramelized.
  • Step 6: Once cooked, remove the skewers from the grill and transfer them to a serving platter. Garnish with fresh cilantro or additional lime wedges if desired.

Notes
