  • 1 large or 2 small russet potatoes sliced into 1/8 inch rounds
  • 2 Tbsp olive oil

  • 2 oz sharp shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 2 Tbsp sour cream
  • 1 green onion chopped

Instructions

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Wash and dry the russet potatoes thoroughly. Slice them into 1/8 inch rounds.
  • Step 3: Toss the potato slices with olive oil, salt, and pepper in a large bowl.
  • Step 4: Line a baking sheet with parchment paper and arrange the potato rounds in a single layer.
  • Step 5: Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • Step 6: Remove from the oven, sprinkle with cheddar cheese and crumbled bacon, then return to the oven for 5-7 minutes until cheese melts.
  • Step 7: Drizzle with sour cream and sprinkle with chopped green onions before serving.
