Ingredients

Ingredients

  • 1 16 oz bag frozen raw, peeled, deveined tail-on shrimp thawed
  • 2 tablespoons Thrive Algae Oil for cooking
  • 1/2 cup diced yellow onion
  • 4 cloves garlic minced
  • 2 pouches microwaveable brown rice prepared
  • 1 14.5 oz can basil, garlic & oregano diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

Instructions

  • In a large skillet, heat the Thrive Algae Oil over medium heat. Add the diced yellow onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the thawed shrimp to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook for about 3-5 minutes, or until the shrimp turns pink and opaque.
  • Stir in the can of basil, garlic & oregano diced tomatoes, followed by the prepared brown rice. Mix well to combine all ingredients, allowing the flavors to meld together. Let it cook for another 3-4 minutes, stirring occasionally.
  • Once everything is heated through, remove the skillet from the heat. Stir in the shredded Parmesan cheese until melted and well incorporated. Lastly, sprinkle the chopped fresh parsley on top.
  • Spoon the Light Italian Shrimp & Rice Skillet into bowls and serve immediately.
