  • 1 tbsp poppy seeds adds texture and enhances lemon flavor
  • ½ tsp sea salt to balance the sweetness
  • 2-6 tbsp water to help bind the mixture

Instructions

  • Gather all your ingredients on the counter to make the process smoother.
  • In a food processor, combine the almond butter, oats, protein powder (or additional oats), hemp seeds (if using), pitted dates (or maple syrup), lemon zest, poppy seeds, and sea salt. Pulse until well combined.
  • If the mixture is too dry, add water one tablespoon at a time until you reach a sticky but manageable consistency.
  • Using your hands or a cookie scoop, portion out the mixture and roll it into small balls, about 1 inch in diameter.
  • Place them on a parchment-lined baking sheet or plate. Chill in the refrigerator for at least 30 minutes to help them firm up.
