Ingredients

Crust Ingredients

  • 1 cup Salted Butter at room temperature
  • 2 cups White Sugar
  • 2.25 cups All-Purpose Flour

Filling Ingredients

  • 4 large Eggs
  • 0.5 cup Fresh Lemon Juice from about 2 large lemons

For Dusting

  • Powdered Sugar for dusting

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, cream together the room temperature salted butter and white sugar until light and fluffy.
  • Step 3: Gradually add in 2 cups of all-purpose flour, mixing until combined. Press the dough into the bottom of a greased 9x13-inch baking dish and bake for 15 minutes.
  • Step 4: In a separate bowl, whisk together the 4 large eggs and remaining ¼ cup of flour. Add white sugar and fresh lemon juice, whisk until smooth.
  • Step 5: Pour the lemon filling over the hot crust and bake for an additional 20-25 minutes.
  • Step 6: Allow to cool, dust with powdered sugar, and cut into squares.
