Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a large mixing bowl, cream together the room temperature salted butter and white sugar until light and fluffy.
Step 3: Gradually add in 2 cups of all-purpose flour, mixing until combined. Press the dough into the bottom of a greased 9x13-inch baking dish and bake for 15 minutes.
Step 4: In a separate bowl, whisk together the 4 large eggs and remaining ¼ cup of flour. Add white sugar and fresh lemon juice, whisk until smooth.
Step 5: Pour the lemon filling over the hot crust and bake for an additional 20-25 minutes.
