  • 1/3 cup almonds or pecans (or 6 tbsp almond flour for a nut-free version)
  • 1 tbsp cocoa powder
  • 2 tsp cocoa powder
  • 1 tbsp granulated erythritol or sweetener of choice
  • a pinch stevia (optional)
  • 1/8 tsp salt
  • 1/4 tsp baking powder
  • 3 tbsp milk of choice (or 2 if using liquid sweetener)
  • 1/4 tsp pure vanilla extract
  • optional chocolate chips or sugar-free chocolate chips

Directions: Keto Mug Cake

  • In your microwave-safe mug, combine the almond flour (or ground nuts), cocoa powder, erythritol, pinch of stevia (if using), salt, and baking powder. Mix well with a fork or whisk to ensure there are no lumps.
  • Next, add the milk of your choice and the vanilla extract to the dry ingredients. Stir until you have a smooth batter. If you’re using liquid sweetener, remember to adjust the milk quantity to 2 tablespoons.
  • If you’re feeling indulgent, fold in a few chocolate chips or sugar-free chocolate chips for an added treat.
  • Microwave the mug for about 60 to 90 seconds, depending on your microwave's power. Start with 60 seconds, and if it’s not set, continue microwaving in 10-second intervals until it’s fully cooked. The cake should rise and look firm on top.
  • Allow the mug cake to cool for a minute or two before digging in. This helps set the texture and prevents burns.
