Instructions
Step 1: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix everything together until well combined.
Step 2: Lay one tortilla flat on a clean surface. Spoon a generous amount of the cheese and jalapeño mixture onto half of the tortilla, spreading it evenly. Fold the other half of the tortilla over the filling to create a half-moon shape.
Step 3: Heat a large skillet over medium heat and add a little cooking oil or spray with non-stick spray. Once hot, place the folded quesadilla into the skillet. Cook for about 3-4 minutes on one side until golden and crispy. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side. Repeat the process for the remaining tortillas.
Step 4: Once cooked, remove the quesadillas from the skillet and let them cool for a minute before cutting them into wedges. Serve warm with your favorite dipping sauces like salsa, guacamole, or sour cream. Garnish with sliced green onions.
