Ingredients

  • 2 pounds red potatoes washed and cut into chunks
  • 3 tablespoons olive oil extra virgin
  • 2 teaspoons Italian seasoning blend of herbs such as oregano, basil, and thyme
  • 1 teaspoon salt kosher or sea salt

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash the red potatoes thoroughly and cut them into even-sized chunks, about 1 to 2 inches each.
  • In a large mixing bowl, combine the cut potatoes with the olive oil, Italian seasoning, and salt. Toss until well coated.
  • Spread the seasoned potatoes in a single layer on the baking sheet.
  • Roast in the preheated oven for about 25 to 30 minutes, tossing halfway through.
  • Check for doneness; they should be golden brown and crispy. If desired, roast for an additional 5 minutes for extra crispiness.
  • Remove from the oven, let cool for a few minutes, and serve hot.
