Ingredients

  • 3 pounds red potatoes washed (about 8 or 9 medium)
  • 1 cup Parmesan cheese grated
  • 1 cup breadcrumbs (Panko for extra crunch)
  • 2 tablespoons Italian seasoning
  • 1/2 cup olive oil

Instructions

  • Step 1: Preheat the oven to 425°F (220°C) for a crispy exterior.
  • Step 2: Wash and cut the red potatoes into quarters or sixths for uniform cooking.
  • Step 3: In a mixing bowl, combine Parmesan cheese, breadcrumbs, Italian seasoning, and olive oil.
  • Step 4: Toss the cut potatoes in the coating mixture until evenly coated.
  • Step 5: Spread the coated potatoes in a single layer on a baking sheet.
  • Step 6: Roast for about 30-35 minutes, tossing halfway for even cooking.
  • Step 7: Remove from the oven, let cool slightly, then serve garnished with extra Parmesan or herbs.
