Ingredients

For the Mashed Potatoes:

  • 5 lbs Russet or Yukon Gold potatoes
  • 1 teaspoon salt Essential for seasoning the water
  • 1 cup sour cream Adds creaminess
  • ½ cup butter softened
  • 4 ounces cream cheese softened
  • 2 cloves garlic minced
  • 1 teaspoon salt more to taste

  • Step 1: Prepare the Potatoes - Peel and quarter the potatoes.
  • Step 2: Add Ingredients to the Instant Pot - Place the quartered potatoes into the Instant Pot. Add 1 teaspoon of salt and enough water to cover the potatoes, about 1-2 cups.
  • Step 3: Cook Under Pressure - Secure the lid on the Instant Pot and set it to cook on high pressure for 10 minutes. Allow for a natural release for 10 minutes, then perform a quick release for any remaining pressure.
  • Step 4: Drain and Mash - Remove the lid and drain any excess water from the potatoes. Return the potatoes to the pot.
  • Step 5: Mix in the Goodness - Add the softened butter, cream cheese, sour cream, minced garlic, and additional salt to taste. Mash until smooth and creamy.
  • Step 6: Adjust Seasoning - Taste and adjust the seasoning if necessary.
