Ingredients

Instructions

Step 1: Prepare Your Peaches

  • Start by washing your peaches thoroughly. Pit and chop them into roughly 1-inch pieces. The size doesn’t need to be exact since the cooking process will soften the fruit considerably.

Step 2: Combine Ingredients in the Instant Pot

  • Add the chopped peaches, sugar or sweetener of choice, lemon juice, vanilla extract, ground cinnamon, and salt into the Instant Pot. Stir gently to combine all the ingredients evenly.

Step 3: Pressure Cook the Mixture

  • Secure the lid on the Instant Pot and make sure the valve is set to the sealing position. Select the “Manual” or “Pressure Cook” function and set the timer for 10 minutes on high pressure. The Instant Pot will take a few minutes to come to pressure before the cooking time begins.

Step 4: Natural Release and Mash

  • When the cooking time is up, allow the Instant Pot to release pressure naturally for about 10 minutes, then carefully perform a quick release to let out any remaining steam. Remove the lid and stir the peach mixture. At this point, mash the preserves lightly with a potato masher or fork to your desired consistency—chunky or smooth.

Step 5: Optional Thickening

  • If you prefer thicker preserves, you can use the “Sauté” function on the Instant Pot to simmer the mixture for an additional 5-10 minutes, stirring frequently until it reaches your preferred thickness.

Step 6: Cool and Store

  • Allow the preserves to cool slightly before transferring them into sterilized jars or airtight containers. Store in the refrigerator for up to 2 weeks or freeze for longer storage.
