Ingredients

  • 4 pitted Medjool dates enriches the pudding with natural sweetness and a chewy texture
  • 1/2 cup pumpkin puree the star ingredient, adds flavor, creaminess, and vibrant color
  • 3/4 cup almond milk can be substituted with any non-dairy or dairy milk
  • 2 tablespoons chia seeds the thickening agent that gives the pudding its unique texture
  • 1 pinch pumpkin spice optional, for an extra warm flavor
  • 1 pinch cinnamon optional, adds a hint of spice and sweetness

Instructions

  • Start by placing the pitted Medjool dates in your blender or food processor. Blend them until they form a smooth paste, adding a splash of almond milk if necessary to help them blend.
  • In a mixing bowl, combine the pumpkin puree, the date paste, and the remaining almond milk. Mix until smooth.
  • Stir in the chia seeds until they are evenly distributed throughout the mixture. Add optional pumpkin spice and cinnamon for extra flavor.
  • Cover the bowl and place it in the refrigerator for at least 30 minutes to allow the chia seeds to absorb the liquid and thicken the pudding.
  • Once thickened, stir the pudding and spoon it into serving bowls or jars. Add your favorite toppings like nuts, seeds, or a sprinkle of cinnamon, if desired.
