  • 1 cup Cold heavy whipping cream
  • 2 tablespoons Powdered sugar
  • ½ teaspoon Pure vanilla extract
  • 1 package (8 oz) Cream cheese, softened
  • ½ cup Granulated sugar
  • 1 teaspoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 cup Cherry pie filling (or fresh cherries with sugar)
  • Graham cracker crumbs for the crust (optional)

Instructions

  • Step 1: If you choose to make a crust, start by crushing graham crackers into fine crumbs. Combine the crumbs with melted butter and press them into the bottom of your serving cups or jars.
  • Step 2: In a large bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, lemon juice, and lemon zest. Mix until blended.
  • Step 3: In another bowl, whip the cold heavy whipping cream until it thickens. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form.
  • Step 4: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  • Step 5: Spoon the cheesecake filling into the prepared cups on top of the crust (if using). Top with cherry pie filling or fresh sweetened cherries.
  • Step 6: Cover the cups with plastic wrap and refrigerate for at least 2 hours before serving.

Notes
