Ingredients
Ingredients
1cupCold heavy whipping cream
2tablespoonsPowdered sugar
½teaspoonPure vanilla extract
1package (8 oz)Cream cheese, softened
½cupGranulated sugar
1teaspoonLemon juice
1teaspoonLemon zest
1cupCherry pie filling (or fresh cherries with sugar)
Graham cracker crumbs for the crust (optional)
Instructions
Step 1: If you choose to make a crust, start by crushing graham crackers into fine crumbs. Combine the crumbs with melted butter and press them into the bottom of your serving cups or jars.
Step 2: In a large bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, lemon juice, and lemon zest. Mix until blended.
Step 3: In another bowl, whip the cold heavy whipping cream until it thickens. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form.
Step 4: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
Step 5: Spoon the cheesecake filling into the prepared cups on top of the crust (if using). Top with cherry pie filling or fresh sweetened cherries.
Step 6: Cover the cups with plastic wrap and refrigerate for at least 2 hours before serving.

For extra flavor, consider adding a hint of almond extract. If using fresh cherries, pit and slice them before topping. Store leftovers in the refrigerator for up to 3 days.
