Ingredients

  • 1 French baguette sliced into 1/2-inch thick pieces
  • 4 ripe peaches pitted and quartered
  • 1/4 cup honey
  • 3 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves plus extra for garnish
  • salt and pepper to taste
  • 8 ounces goat cheese softened

Instructions

  • Preheat your oven to 400°F (200°C). In a mixing bowl, toss the quartered peaches with honey, 2 tablespoons of olive oil, fresh thyme leaves, and a pinch of salt and pepper until well-coated.
  • Spread the peaches evenly on a baking sheet lined with parchment paper or a silicone baking mat. Roast for about 15-20 minutes until tender and caramelized around the edges.
  • While the peaches roast, brush the baguette slices lightly with the remaining 1 tablespoon of olive oil. Arrange on a separate baking sheet and toast in the oven for about 5-7 minutes until golden and crispy.
  • Spread a generous layer of softened goat cheese on each toasted baguette slice. Top with a few pieces of the honey-roasted peaches.
  • Garnish with fresh thyme leaves and a light drizzle of honey if desired. Serve immediately to enjoy the contrast of textures and flavors.
