Ingredients

  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes sliced
  • 1 cup cucumbers sliced
  • 2 cups romaine lettuce chopped

For the Dressing:

  • 3 tablespoons tahini
  • 1/2 tablespoon honey
  • 1 tablespoon low sodium soy sauce

Instructions

Preparation Steps:

  • In a mixing bowl, combine the low sodium soy sauce, chipotle sauce, honey, lime juice, and minced garlic. Whisk together until well blended.
  • Take the chicken breast and place it in a shallow dish. Pour the marinade over the chicken, ensuring it is fully coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  • Heat the avocado oil in a skillet over medium-high heat. Once hot, add the marinated chicken breast. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice char. Remove from heat and let it rest for a few minutes before slicing.
  • While the chicken is cooking, prepare your base. Divide the cooked brown rice among your serving bowls.

  • Slice the cooked chicken and place it on top of the fresh ingredients. Drizzle the tahini dressing over the entire bowl, and give it a gentle toss if desired.
