Ingredients

  • 6 tablespoons salted butter
  • 1/2 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 cup light corn syrup
  • 1/2 teaspoon vanilla extract
  • 2 cups pecan halves
  • 16 oz almond bark or high quality chocolate

Instructions

  • Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  • Melt the salted butter in a medium saucepan over medium heat. Add light brown sugar, granulated sugar, sweetened condensed milk, and light corn syrup. Stir continuously until it reaches a gentle boil. Reduce heat and simmer for about 5 minutes, stirring constantly until thickened.
  • Remove from heat and stir in vanilla extract. Gently fold in pecan halves until fully coated.
  • Scoop small clusters onto the prepared baking sheet, aiming for about 2 tablespoons per cluster. Let cool and set for about 30 minutes.
  • Melt the almond bark or chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth.
  • Dip each caramel-pecan cluster into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing excess chocolate to drip off before placing them back on the parchment.
  • Allow the chocolate to set at room temperature or refrigerate for about 15-20 minutes for quicker results.
