In a large mixing bowl, combine the flour, salt, and dried yeast. Stir well to ensure the yeast is evenly distributed. In a separate bowl, melt the butter and let it cool slightly. Once cooled, whisk in the eggs until fully combined.
Make a well in the center of the flour mixture and pour in the egg and butter mixture. Stir with a wooden spoon until a dough begins to form. If the dough seems too dry, add a tablespoon of water at a time until it comes together.
Crumble the blue cheese into the dough and knead gently until the cheese is evenly incorporated. This will take a few minutes, and you want to ensure that the cheese is well-distributed throughout the dough.
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
Once the dough has risen, preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. On a lightly floured surface, divide the dough into small portions. Roll each portion into a rope about 10 inches long and shape it into a pretzel.
Place the shaped pretzels on the prepared baking sheet. Brush the tops with a little melted butter and sprinkle with sesame seeds for an extra crunch and flavor.
Bake the pretzels in the preheated oven for about 15-20 minutes, or until they are golden brown and puffed up.
Once baked, remove the pretzels from the oven and let them cool slightly on a wire rack. Serve warm with your favorite dipping sauces.
