Begin by cutting the Halloumi cheese into fry-shaped strips, approximately 1/2 inch thick.
In a shallow dish, combine the all-purpose flour, salt, and za'atar spice blend. Stir well.
In your frying pan, pour in the Mina Moroccan olive oil. Heat it over medium heat until it shimmers.
Take each Halloumi strip and coat it thoroughly in the seasoned flour mixture. Shake off any excess flour.
Fry the Halloumi strips in batches for about 2-3 minutes on each side, or until golden brown and crispy.
Transfer the Halloumi fries to a paper towel-lined plate to absorb any excess oil.
In a mixing bowl, combine the Greek yogurt, garlic sauce, salt, fresh herbs, harissa sauce, and lemon juice. Stir until smooth.
Serve the Halloumi fries warm with the dipping sauce on the side. Enjoy!
