Ingredients

  • 1 cup coconut water provides hydration and essential electrolytes
  • 1 cup lemon juice freshly squeezed for a bright, tangy flavor
  • 1 cup gelatin a natural thickening agent that gives the gummies their chewy texture
  • 2 cups blueberries (heaping) rich in antioxidants and vitamins to support gut health
  • 4 tbsp maple syrup a natural sweetener that enhances the flavor without overpowering the other ingredients

Instructions

  • In a blender, combine the heaping 2 cups of blueberries and 1 cup of coconut water. Blend until smooth and well combined.
  • In a small saucepan, combine the blueberry-coconut mixture with 1 cup of lemon juice and 4 tablespoons of maple syrup. Heat over low to medium heat, stirring occasionally until everything is well mixed.
  • Sprinkle the 1 cup of gelatin over the mixture slowly while whisking continuously. This will help prevent clumps from forming. Keep whisking until the gelatin is completely dissolved.
  • Once the mixture is smooth and gelatin is fully incorporated, remove the saucepan from heat. Allow it to cool slightly before pouring it into the gummy molds.
  • Carefully pour the mixture into your silicone molds. You can use a dropper or a small pitcher for easier pouring.
  • Place the filled molds in the refrigerator and let them set for at least 2-3 hours, or until firm.
  • Once the gummies are set, gently remove them from the molds. Store them in an airtight container in the refrigerator.
