Ingredients

Eggs

  • 12 large eggs hard boiled

Avocado

  • 2 ripe avocados peeled and chopped

Tomato

  • 1 plum tomato diced (plus extra for garnish)

Red Onion

  • 1 tablespoon red onion finely diced

Cilantro

  • 1 tablespoon cilantro chopped (plus more for garnish)

Lime Juice

  • 1/2 lime lime juice freshly squeezed

Seasoning

  • to taste salt
  • to taste pepper
  • 1/2 teaspoon garlic powder

Jalapeño

  • 1/2 to 1 jalapeño diced (optional)

Instructions

  • Step 1: Hard Boil the Eggs - Place the eggs in a large pot and cover with cold water. Bring to a boil, cover, and remove from heat. Let sit for 12-14 minutes.
  • Step 2: Prepare the Avocado Filling - In a mixing bowl, combine avocados, diced tomato, red onion, cilantro, lime juice, garlic powder, salt, and pepper. Mash until desired creaminess is reached.
  • Step 3: Peel the Eggs - Transfer eggs to ice water for 5 minutes. Crack and peel under running water.
  • Step 4: Assemble the Deviled Eggs - Cut eggs in half, remove yolks, and mix with guacamole filling. Fill egg whites with the mixture.
  • Step 5: Garnish and Serve - Top with diced tomato and cilantro. Serve immediately or refrigerate until ready.
