Ingredients

For the Burgers:

  • 1 pound lean ground turkey
  • 1/2 cup bread crumbs
  • 2 tablespoons well-whisked egg
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon Morton kosher salt plus more for sprinkling
  • 1/2 teaspoon ground black pepper plus more for sprinkling
  • 2 ounces goat cheese
  • 4 soft hamburger buns
  • 1 tablespoon olive oil
  • 4 leaves butter lettuce
  • 1/2 cup sun-dried tomato spread

  • In a large mixing bowl, combine the ground turkey, bread crumbs, well-whisked egg, lemon juice, lemon zest, minced rosemary, minced thyme, kosher salt, and ground black pepper. Use your hands to gently mix everything until just combined. Be careful not to overmix to keep the burgers tender.
  • Once your mixture is ready, divide it into four equal portions. Shape each portion into a patty, about 3/4 inch thick. Use your thumb to create a small indentation in the center of each patty to help them cook evenly.
  • Take your goat cheese and slice it into thin rounds. Place one slice of goat cheese in the center of each patty, then fold the edges of the turkey mixture around the cheese to seal it in. This will create a delicious surprise in the center of your burger!
  • Heat the olive oil in a skillet or grill over medium heat. Once hot, add the patties to the skillet or grill. Cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the burgers are golden brown. Sprinkle with extra salt and pepper while cooking for enhanced flavor.
  • Toast the hamburger buns lightly on the grill or in a toaster. Spread a generous amount of sun-dried tomato spread on each bun, then layer with the cooked turkey burger and a butter lettuce leaf. Top with the other half of the bun and serve immediately.

Notes
