Ingredients

  • 1/2 medium white onion diced
  • 1 lb. ground beef lean
  • 8 oz. tomato sauce
  • 3 tbsp homemade taco seasoning or store-bought
  • 8 medium flour or corn tortillas
  • 1 cup lettuce shredded
  • 1 cup shredded taco cheese blend
  • 1 large Roma tomato diced
  • 4 tbsp sour cream
  • Hot sauce to taste

Instructions

  • In a skillet over medium heat, add a drizzle of oil. Once hot, add the diced onion and sauté for about 2-3 minutes until translucent.
  • Add the ground beef to the skillet with the onions. Use your spatula to break it apart. Cook until the beef is browned and fully cooked through, about 5-7 minutes.
  • Once the beef is cooked, drain any excess fat if necessary. Stir in the taco seasoning and tomato sauce. Mix well and simmer for an additional 3-5 minutes.
  • While the beef mixture is simmering, warm the tortillas in a dry skillet over low heat for about 30 seconds on each side, or microwave wrapped in a damp paper towel for about 30 seconds.
  • On each tortilla, add a scoop of the beef mixture. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream. Drizzle with hot sauce if desired.
  • Arrange your tacos on a serving platter and enjoy!

Equipment

  • Skillet
  • Spatula
  • Measuring spoons
  • Serving Platter
  • Knife and cutting board

Notes

  • Let the beef mixture sit off the heat for a few minutes to deepen the flavors.
  • Try different toppings like avocado or jalapeños for a unique twist.
  • Make a double batch of the beef mixture to freeze for easy meals later.
