Ingredients

  • 1 to 1½ pounds chicken breasts
  • 1 cup water
  • ¾ tablespoon salt
  • ½ tablespoon pepper
  • 1 tablespoon sugar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic chopped coarsely
  • ½ cup good BBQ sauce
  • ½ tablespoon hot sauce (I used Frank's Red Hot)
  • 2 tablespoons butter
  • 2 tablespoons hot sauce (for the sauce mix)
  • 2 tablespoons honey
  • 2 ounces cream cheese
  • ½ cup Greek yogurt
  • 2 ounces blue cheese
  • Salt & pepper to taste
  • Chopped celery
  • Chopped carrots
  • Lettuce or spinach

Instructions

  • In a mixing bowl, combine the water, salt, pepper, sugar, Dijon mustard, and chopped garlic. Stir well until the sugar and salt dissolve. Add the chicken breasts to the bowl, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  • In another bowl, mix together the BBQ sauce, hot sauce, butter, honey, cream cheese, Greek yogurt, and blue cheese. Whisk until smooth and well combined.
  • Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  • While the chicken is resting, prepare your veggies. Chop the celery and carrots, and wash the lettuce or spinach. Slice the grilled chicken into strips.
  • Take a soft pita and spread a generous amount of the BBQ sauce mixture inside. Add a handful of lettuce or spinach, followed by the sliced chicken, chopped celery, and carrots. Drizzle a little more sauce on top for added flavor.
  • Fold the sides of the pita over the filling and roll it up tightly. You can secure the wrap with a toothpick or wrap it in foil for easy handling. Repeat this with the remaining pitas and filling.
  • Your delicious grilled chicken wraps are ready to serve! Enjoy them warm with your favorite sides or dip.
