Ingredients

  • 2 cups Greek yogurt plain, full-fat or low-fat
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • fresh cranberries about 1 cup, optional macerate with 1 teaspoon honey
  • orange segments from peeled oranges, membranes removed
  • orange zest freshly grated, for topping
  • granola for topping and layering

Instructions

  • Start by peeling your oranges and carefully removing the white pith. Segment the oranges by cutting between the membranes to release the juicy pieces. Set aside the segments. Use a zester or fine grater to remove the orange zest, avoiding the bitter white pith.
  • In a mixing bowl, combine 2 cups of Greek yogurt with 1/4 cup honey and 1/2 teaspoon vanilla extract. Stir gently until the honey and vanilla are fully incorporated, creating a smooth and flavorful yogurt base.
  • If you prefer a slightly softened cranberry texture, you can briefly macerate the fresh cranberries by tossing them with a teaspoon of honey. Otherwise, use them fresh for a tart pop in every bite.
  • In your parfait glasses or bowls, start with a layer of the yogurt mixture. Follow with a layer of fresh cranberries and orange segments. Sprinkle a spoonful of granola over the fruit, then repeat the layers until the glasses are filled, finishing with a generous sprinkle of granola and a pinch of orange zest on top for a vibrant finish.
