Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter room temperature
  • 1 1/4 cups light brown sugar packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 cups plain oat granola
  • 1/2 cup old-fashioned oats
  • 1 cup semi-sweet chocolate chips or chunks
  • 1/2 cup dried cherries coarsely chopped if large

Instructions

  • Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out perfectly golden.
  • In a medium bowl, whisk together the all-purpose flour, salt, baking powder, and baking soda. Set this mixture aside as you prepare the wet ingredients.
  • In a large mixing bowl, use an electric mixer to cream the room-temperature unsalted butter, light brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then, pour in the vanilla extract and continue to mix until fully incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough cookies.
  • Gently fold in the plain oat granola, old-fashioned oats, semi-sweet chocolate chips, and dried cherries. The mixture will be thick and full of delicious textures.
  • Using a cookie scoop or tablespoon, drop balls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still soft.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!

Notes

  • Feel free to substitute the dried cherries with other fruits like cranberries or raisins based on your preference.

  • If you like a touch of spice, a pinch of cinnamon or nutmeg can elevate the flavor profile beautifully.
