Ingredients

For the Truffles:

  • 1/2 cup unsalted butter
  • 1/2 cup maple syrup
  • 6 slices peeled fresh ginger
  • 1 tablespoon water
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon Tabasco sauce adjust according to your spice preference
  • 12 ounces pecans, finely chopped
  • 16 ounces goat cheese, at room temperature the star ingredient
  • 1 cup arugula leaves for garnish and display, optional

  • Step 1: Prepare the Ginger Mixture - Start by adding the peeled ginger slices and water into a food processor. Blend until you achieve a smooth consistency. This fresh ginger will add a vibrant kick to your truffles.
  • Step 2: Make the Butter Mixture - In a small saucepan, melt the unsalted butter over low heat. Once melted, stir in the maple syrup, ground ginger, salt, and Tabasco sauce. Allow it to cool slightly before combining it with the ginger mixture.
  • Step 3: Combine the Goat Cheese - In a mixing bowl, add the room temperature goat cheese. Pour the cooled butter mixture over the cheese, then season with salt and freshly ground black pepper. Using a spatula or your hands, mix until the ingredients are well combined and smooth.
  • Step 4: Chill the Mixture - Cover the bowl with plastic wrap and refrigerate for about 30 minutes, or until the mixture is firm enough to handle.
  • Step 5: Form the Truffles - Once the mixture is chilled, use a cookie scoop or melon baller to portion out the goat cheese mixture. Roll each portion into a ball using your hands. The size can be about 1 inch in diameter.
  • Step 6: Coat the Truffles - Spread the finely chopped pecans on a plate. Roll each goat cheese ball in the chopped pecans until they are fully coated. This adds a wonderful crunch and flavor to your truffles.
  • Step 7: Chill Again - Place the coated truffles back on the baking sheet and refrigerate for another 30 minutes to firm up before serving.
