Ingredients

For the Chicken:

  • 2 tablespoons oil divided
  • 1 lb boneless chicken thighs cut into 1-inch pieces
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon cracked pepper
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

For the Mushrooms:

  • 8 ounces sliced brown mushrooms
  • 3 tablespoons butter
  • 1 tablespoon brown shallot chopped
  • 1 tablespoon green bell pepper seeded and chopped
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped

Instructions

Directions:

  • Start by placing the chicken pieces in a bowl. Add salt, cracked pepper, Italian seasoning, garlic powder, onion powder, and paprika. Toss everything together until the chicken is well coated. Let it marinate for about 10 minutes while you prepare the other ingredients.
  • In a large skillet, heat 1 tablespoon of oil over medium-high heat. Once hot, add the marinated chicken pieces. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  • In the same skillet, add the remaining 1 tablespoon of oil along with the butter. Once the butter has melted, add the chopped shallots and green bell pepper. Sauté for 2-3 minutes until the shallots become translucent. Then, add the sliced mushrooms and cook for another 5 minutes until they are tender and browned.
  • Stir in the minced garlic and sauté for an additional minute until fragrant. Return the cooked chicken to the skillet, mixing everything well. Cook for another 2-3 minutes to allow the flavors to meld together.
  • Remove the skillet from heat and sprinkle the chopped fresh parsley over the chicken and mushrooms. Serve immediately, and enjoy your Garlic Mushroom Chicken Bites warm!
