Ingredients

  • 1 pound beef steak cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 teaspoon fresh thyme chopped
  • salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • fresh parsley chopped for garnish

Instructions

Prepare Your Ingredients

  • Cut your beef steak into even bite-sized pieces. Mince the garlic cloves finely and chop your fresh thyme and parsley. Measure out your butter, chicken broth, and cheeses so everything is ready.

Cook the Orzo

  • In a large skillet, bring 2 cups of chicken broth to a gentle boil. Add the orzo pasta and cook for about 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the broth. Lower heat to a simmer once nearly done to avoid burning.

Add the Cheeses to the Orzo

  • Remove the skillet from heat once orzo is cooked and most liquid absorbed. Stir in shredded mozzarella and grated Parmesan cheese until melted and creamy.

Sear the Steak Bites

  • Melt 2 tablespoons of butter over medium-high heat in a separate pan. Add steak pieces in a single layer, season with salt and pepper. Sear undisturbed for about 2-3 minutes per side until browned but still tender. Remove steak from pan and set aside.

Make Garlic Butter Sauce

  • Reduce heat to medium and add remaining 2 tablespoons of butter. Stir in minced garlic and chopped thyme; cook for 1-2 minutes until fragrant but not browned. Return steak bites to pan and toss gently to coat in garlic butter sauce.

Assemble and Serve

  • Spoon creamy cheesy orzo onto plates, then pile garlic butter steak bites on top. Garnish with freshly chopped parsley and serve immediately.
