Instructions

  • Step 1: Preheat your oven to 425°F (220°C).
  • Step 2: Scrub the Russet potatoes under cold water and dry them thoroughly.
  • Step 3: Carefully make thin slices in each potato, about 1/4 inch apart, without cutting all the way through.
  • Step 4: Drizzle olive oil over each potato and sprinkle with salt.
  • Step 5: Place the potatoes on a baking sheet and bake for about 45-50 minutes.
  • Step 6: Insert the thinly sliced cheese into each potato slice and return to the oven for an additional 5-10 minutes.
  • Step 7: Top with sour cream, bacon pieces, and chives. Serve warm.
