1small loafFrench bread6-8 inches, cut into 1/2 inch slices
Cheese Mixture
10ouncesgoat cheese
8ounceslow-fat cream cheese
1tablespoonhoney
Balsamic Reduction
1cupbalsamic vinegaruse good quality
¼cupgranulated sugardivided
Fruits
1cupstrawberriesdiced
½cupblueberries
1cupraspberries
½cupfresh basilchopped
Instructions
In a small saucepan, pour 1 cup of balsamic vinegar. Heat over medium heat until it simmers, then reduce heat to low and let simmer for 15-20 minutes until thickened. Set aside to cool.
In a mixing bowl, combine goat cheese and cream cheese. Blend until smooth and creamy. Add honey and mix until fully incorporated. Set aside.
Preheat oven to 375°F (190°C). Arrange slices of French bread on a baking sheet and lightly toast for 5-7 minutes until golden brown.
Spread a generous scoop of the cheese mixture over each slice of toasted bread.
Top each slice with diced strawberries, blueberries, and raspberries.
Drizzle the cooled balsamic reduction over the assembled bruschetta.
Garnish with chopped fresh basil.
