Ingredients

Bread

  • 1 small loaf French bread 6-8 inches, cut into 1/2 inch slices

Cheese Mixture

  • 10 ounces goat cheese
  • 8 ounces low-fat cream cheese
  • 1 tablespoon honey

Balsamic Reduction

  • 1 cup balsamic vinegar use good quality
  • ¼ cup granulated sugar divided

Fruits

  • 1 cup strawberries diced
  • ½ cup blueberries
  • 1 cup raspberries
  • ½ cup fresh basil chopped

Instructions

  • In a small saucepan, pour 1 cup of balsamic vinegar. Heat over medium heat until it simmers, then reduce heat to low and let simmer for 15-20 minutes until thickened. Set aside to cool.
  • In a mixing bowl, combine goat cheese and cream cheese. Blend until smooth and creamy. Add honey and mix until fully incorporated. Set aside.
  • Preheat oven to 375°F (190°C). Arrange slices of French bread on a baking sheet and lightly toast for 5-7 minutes until golden brown.
  • Spread a generous scoop of the cheese mixture over each slice of toasted bread.
  • Top each slice with diced strawberries, blueberries, and raspberries.
  • Drizzle the cooled balsamic reduction over the assembled bruschetta.
  • Garnish with chopped fresh basil.
  • Serve immediately and enjoy!

Notes
