Instructions

  • Make sure your watermelon chunks are frozen solid. If you bought fresh watermelon, cut it into chunks and freeze them for at least 4 hours or overnight. Fresh lime juice is essential here; avoid bottled lime juice for the best taste.
  • Add the frozen watermelon chunks, coconut water, lime juice, and honey (or agave syrup) into a high-speed blender. The coconut water will help the blender process the frozen fruit smoothly while infusing subtle tropical notes.
  • Pulse the blender a few times to break up the frozen watermelon, then blend continuously until the mixture is smooth and has a slushy texture. If the mixture is too thick and won’t blend well, add a splash more coconut water to help it along, but be careful not to dilute the flavor.
  • Give your slush a quick taste. If you prefer it sweeter, add a little more honey or agave syrup and blend again briefly. If you want it tangier, squeeze in a bit more lime juice.
  • Pour the slush into chilled glasses and garnish each with a few fresh mint leaves. The mint adds a lovely aroma and a splash of color that makes this mocktail feel extra special.
