Breading Ingredients

  • 1 cup All-Purpose Flour
  • 2 large Eggs
  • 1 tablespoon Water
  • ¾ cup Yellow Cornmeal
  • ¾ cup Dry Plain Breadcrumbs
  • 1 teaspoon Kosher Salt
  • Fresh Ground Black Pepper To taste
  • 1 pinch Cayenne Pepper
  • ¼ cup Vegetable Oil For frying
  • ½ cup Buttermilk Dressing For serving

Instructions

  • Step 1: Prepare the Tomatoes - Wash the green tomatoes thoroughly and slice them into 1/2 inch thick rounds. Lay them on a paper towel and sprinkle lightly with salt.
  • Step 2: Set Up the Breading Station - In one shallow dish, add the all-purpose flour. In a second bowl, whisk together the eggs and water. In a third dish, mix together the cornmeal, breadcrumbs, kosher salt, black pepper, and cayenne pepper.
  • Step 3: Dredge the Tomatoes - Coat each tomato slice in flour, dip it into the egg mixture, and then coat it in the cornmeal and breadcrumb mixture.
  • Step 4: Fry the Tomatoes - Heat the vegetable oil in a large skillet over medium heat. Fry each slice for about 3-4 minutes on each side until golden brown and crispy.
