Ingredients

  • 2 cups fresh cherries pitted and halved
  • 1 cup cream cheese softened
  • 1/2 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 1/4 teaspoon salt

Instructions

Prepare the Cherry Layer

  • Wash, pit, and halve the fresh cherries. Set aside.

Make the Graham Cracker Crust

  • In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and salt. Mix until crumbs are evenly coated and resemble wet sand.
  • Press the mixture firmly into the bottom of an 8x8-inch baking pan to create an even crust layer. Place the pan in the freezer to chill while preparing the filling.

Prepare the Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese with sugar until smooth and creamy.
  • Add vanilla extract and continue mixing.

Whip the Heavy Cream

  • In a separate bowl, whip heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, taking care not to deflate it.

Fold in Fresh Cherries

  • Gently fold the pitted and halved cherries into the cream cheese and whipped cream mixture evenly.

Assemble the Bars

  • Remove crust from freezer and spread cheesecake-cherry filling evenly over the graham cracker base. Smooth the top with a spatula.

Freeze Until Firm

  • Cover the pan with plastic wrap or foil and place in freezer for at least 6 hours or overnight until bars are completely firm.

Serve

  • Remove from freezer and let sit for a few minutes before slicing into bars. Use a sharp knife dipped in hot water for clean cuts. Serve immediately.
