Ingredients

Wet Ingredients

  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 4 tablespoons light brown sugar lightly packed

  • ½ cup coconut oil melted
  • 1 ½ cups oat flour can be made by blending rolled oats
  • 1 teaspoon baking soda
  • ½ cup chocolate chips

Instructions

  • Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Step 2: In a large mixing bowl, whisk together the egg and vanilla extract until well combined.
  • Step 3: Add the light brown sugar and melted coconut oil to the egg and vanilla mixture. Stir until smooth.
  • Step 4: In a separate bowl, mix together the oat flour, baking soda, and salt.
  • Step 5: Slowly add the dry mixture to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
  • Step 6: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  • Step 7: Bake for about 10-12 minutes, or until the edges are slightly golden.
  • Step 8: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
