Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a large mixing bowl, whisk together the egg and vanilla extract until well combined.
Step 3: Add the light brown sugar and melted coconut oil to the egg and vanilla mixture. Stir until smooth.
Step 4: In a separate bowl, mix together the oat flour, baking soda, and salt.
Step 5: Slowly add the dry mixture to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
Step 6: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
Step 7: Bake for about 10-12 minutes, or until the edges are slightly golden.
Step 8: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
