Ingredients

  • 10 oz Oyster mushrooms
  • 6 Tbsp Fajita sauce
  • 4 Tbsp Vegetable oil

For the Bowl:

  • 4 servings Fajita veggies (bell peppers, onions, etc.)
  • 4 servings Mexican fried rice (or your favorite rice)
  • 4 servings Chipotle cilantro lime rice
  • 4 servings Copycat Chipotle corn salsa
  • 4 servings Guacamole
  • 4 Tbsp Vegan chipotle mayo
  • Lettuce (for topping)

Instructions

  • Start by cleaning and slicing the oyster mushrooms into bite-sized pieces. Chop your fajita veggies, typically a mix of bell peppers and onions, into strips. If you're making your rice from scratch, prepare it according to your preferred method, whether it’s stovetop or using a rice cooker.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Once hot, add the oyster mushrooms and sauté them for about 5-7 minutes, or until they are golden brown and tender. Season with a pinch of salt to enhance the flavor.
  • To the skillet, add your prepared fajita veggies. Drizzle the remaining 2 tablespoons of vegetable oil and pour in the fajita sauce. Stir everything together and cook for another 5 minutes, allowing the veggies to soften and absorb the flavors.
  • While the mushrooms and veggies are cooking, prepare your rice. If you're using pre-cooked rice, simply heat it in the microwave or on the stovetop. For a fresh finish, stir in some lime juice and cilantro into your rice for that signature chipotle flavor.
  • To assemble your Fajita Bowl (Vegan Option), start by layering the rice at the bottom of each bowl. Top with the sautéed oyster mushrooms and fajita veggies. Add a generous scoop of corn salsa, a dollop of guacamole, and a drizzle of vegan chipotle mayo. Finish with some fresh lettuce for a crunchy contrast.
