Ingredients

  • 4 large bell peppers (any color, or a mix for a colorful jar)
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 2 tablespoons salt
  • 2 cloves garlic smashed
  • 1 tablespoon everything bagel seasoning

Instructions

  • Start by washing your bell peppers thoroughly. Slice off the tops, remove the seeds, and cut the peppers into thin rings or strips depending on your preference.
  • In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt. Stir over medium heat until the sugar and salt completely dissolve.
  • Remove from heat and add the smashed garlic cloves and everything bagel seasoning to infuse the brine with flavor.
  • Place the sliced bell peppers into clean glass jars, leaving some room for the brine to circulate evenly.
  • Carefully pour the warm brine over the peppers, ensuring they are fully submerged. Press down gently to eliminate air pockets.
  • Seal the jars with lids and let them cool to room temperature. Then transfer to the refrigerator.
  • Allow the peppers to pickle for at least 24 hours. For best flavor, wait 3-5 days before enjoying.
