  • 2 large eggs
  • 2 cups all-purpose flour

Instructions

  • Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Step 2: In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Step 3: Add the salt, vanilla extract, rum extract (if using), and eggs. Beat until well combined and smooth.
  • Step 4: In a separate bowl, whisk together the baking powder, nutmeg, and flour. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Step 5: Transfer the dough onto the prepared baking sheet and shape it into a log about 12 inches long and 3 inches wide. Flatten the top slightly.
  • Step 6: Bake for about 25-30 minutes, until golden brown and firm to the touch. Allow to cool on the baking sheet for 10 minutes.
  • Step 7: Transfer the log to a cutting board and slice diagonally into ½-inch thick pieces. Place cut-side down on the baking sheet.
  • Step 8: Bake again for 10-15 minutes until crunchy and lightly browned. Adjust baking time for desired crunchiness.
