Begin by washing the petite potatoes under cold water to remove any dirt. Place them in a large pot and cover them with water. Add a pinch of salt to the water to flavor the potatoes as they cook.
Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cook the potatoes for about 15-20 minutes, or until they are fork-tender.
While the potatoes are boiling, preheat your oven to 450°F (232°C).
Once the potatoes are cooked, drain them in a colander and let them sit for a few minutes to steam off any excess moisture. Transfer the potatoes to a baking sheet lined with parchment paper. Using a potato masher or fork, gently smash each potato until they are flattened but still intact.
In a mixing bowl, melt the unsalted butter and add the minced garlic, salt, black pepper, paprika, and Italian seasoning. Stir well to combine.
Drizzle or brush the garlic butter mixture generously over each smashed potato.
Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the potatoes are golden and crispy around the edges.
