Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 10 ounces Rotel tomatoes (diced tomatoes with green chilies)
  • 16 ounces Velveeta cheese (cubed)

Instructions

  • In a skillet over medium heat, add 1 pound of ground beef. Cook until browned, breaking it apart with a spoon as it cooks. This should take about 5-7 minutes.
  • Once the beef is cooked through, drain any excess grease. Add 2 tablespoons of taco seasoning to the beef and stir until well combined.
  • Next, pour in the 10 ounces of Rotel tomatoes. Stir to incorporate the tomatoes into the beef mixture, letting it simmer for a couple of minutes.
  • Add the 16 ounces of cubed Velveeta cheese to the skillet. Stir continuously until the cheese has melted and everything is well blended. If you prefer a smoother consistency, you can transfer the mixture to a microwave-safe dish and microwave it in 30-second intervals, stirring in between, until melted.
  • Transfer the dip to a serving bowl and serve warm with your favorite tortilla chips, fresh veggies, or even bread. Enjoy the delightful blend of flavors!
